Spinach Artichoke Dip
Why I Love This Recipe
I got this recipe from a co-worker when I worked for the Walt Disney Company. His mother was a chef and he and I went to culinary school together. It's easy to make, and is so good. I get rave reviews everytime I make it, and it is requested at every office potluck. This recipe is so easy! The ingredients don't require strict measurements, so you can keep those measuring cups in the drawer!! It can even be pre-made and re-heated later!
Ingredients You'll Need
1/2 Onion (diced, chopped, whatever)
3 Cloves of Garlic (minced)
Olive Oil
1 Bag of Pre-Washed Baby Spinach (chopped)(or you can use a box of the frozen spinach. It is already pre-chopped. Just thaw in microwave before adding to the skillet!)
2 Heaping Spoonfuls of Mayonnaise
2 Heaping Spoonfuls of Sour Cream
1 Block (8oz) Cream Cheese
1 Handful of Parmesan Cheese (grated)
1 Jar Quartered Artichoke Hearts (chopped)
Breadcrumbs
Grated Parmesan Cheese
Directions
Heat olive oil in a skillet.
Add onion and garlic and sautee until translucent (about 5 minutes)
Add chopped spinach. Cook until spinach has wilted.
Add cream cheese. Stir until cream cheese has melted and is mixed evenly with spinach.
Add Mayonnaise, Sour Cream and Parmesean Cheese. Stir until cheese has melted.
Add Artichoke Hearts.
Transfer from skillet into casserole dish.
At this point, you can cover and refrigerate until you are ready to finish.
Top dip with more parmesan cheese and breadcrumbs.
Put dip into a pre-heated 350 degree oven and bake until warm and bubbly. It won't take long if you are putting the dip in the oven directly from the stove top. If you pre-made the dip, it will take about 20 minutes.
Serve with your favorite chips or crackers.
