Steak, Egg & Cheese Bagelwich

Why I Love This Recipe
As a working mom, I'm always pressed for time in the mornings, and have a habit of skipping breakfast. One morning, in my quest for something quick and portable, I searched the fridge for things to throw together. I came up with this delicious, quick breakfast that is now a family favorite. I can have it in hand and ready to eat in about 5 minutes. Enjoy!
Ingredients You'll Need
1 plain bagel, per serving
1 egg, per serving
1 slice American cheese, per serving
2-3 small slices deli-style roast beef, per serving (we like Oscar Mayer brand)
Salt and pepper to taste
Directions
Slice bagel, if necessary, and heat in microwave or toaster.
Whisk egg, in a small bowl, until frothy. Season egg with salt and pepper to your desired level.
Spray a nonstick skillet with cooking spray and scramble the egg (omelet style) over medium to medium high heat, until cooked through. Fold in fourths to fit on bagel and set aside.
In the same skillet, heat the slices of roast beef until heated through. This will only take a minute or so.
Assemble bagel with egg, roast beef and top with slice of American cheese (or whatever cheese you like). If you'd like the cheese melted, simply pop the bagel in the microwave or toaster oven and cook until cheese is melted. Enjoy!
