Swedish Tea Cakes

Why I Love This Recipe
These are light and quite sweet. Make them mouth-size bites as they can get crumbly.
Ingredients You'll Need
1/2 c powdered sugar
1 c butter
2 tsp vanilla
2 c all purpose flour
1 c finely ground almonds (or pecans)
1/4 tsp salt

These are light and quite sweet. Make them mouth-size bites as they can get crumbly.
1/2 c powdered sugar
1 c butter

1 c finely ground almonds (or pecans)
1/4 tsp salt
Oven at 325
1. Cream butter & sugar with vanilla until light & fluffy
2. Add flour, almonds and salt. Mix until dough holds together.
3. Shape into 1” balls & place on cookie sheet
4. Bake 15-20 min
5. Cool slightly, about 5 min. Roll in extra powdered sugar
6. Cool completely. Roll in more powdered sugar.
Yields about 5 dozen balls
Variations I've done:
- Substitute almond extract for vanilla
- Use a mix of cocoa and powdered sugar on outside when using pecans inside
- Use rum extract when using pecans
