Why I Love This Recipe

This is my mother's recipe, very good, even my husband who doesn't like pineapples likes this recipe.


Ingredients You'll Need

1 TBSP Cornstarch
1/4 c Water
1 c Celery, 1/2in Slices
1 Bell Pepper, 1" Pieces
1 Med. Onion, Sliced
4 TBSP Oil
1 (9oz) Can Pineapple Chunks
Liquid from Pineapples
2 c Pork, 1 in Chunks, Cooked
1/3-1/2 c Brown Sugar
1/2 c Ketchup
2 TBSP Vinegar
1 TBSP Soy Sauce


Directions

In a small bowl mix cornstarch and water, set aside. In a wok or large skillet, heat oil over medium heat. Saute celery, bell pepper and onion in oil until onions are transparent. Add pineapple, meat, brown sugar, ketchup, vinegar, soy sauce, and pineapple juice. Stir well. When it comes to a boil, add cornstarch mixture, stirring continually until sauce thickens. Serve over Rice.


Yield: 4-5 large servings
