Sweet Potato Banana Bread

Why I Love This Recipe
This recipe was born out of the desire for wintertime after work snack and a limited stock in my pantry. I always have overripe bananas in my freezer, though, so banana bread is an easy option. This particular evening, I just so happened to have a rather tired looking sweet potato on hand, and I thoroughly believe in the "waste not, want not" principle.
Ingredients You'll Need
1 large sweet potato, boiled or roasted and mashed
2 very ripe bananas, mashed
1¼ c. golden brown sugar
¾ c. olive oil
3 eggs, lightly beaten
2¼ c. flour
1½ t. baking soda
1½ t. cinnamon
1 t. nutmeg
½ t. allspice
Pinch of salt
Directions
Preheat oven to 350 F/175 C and prepare two loaf pans.
Combine the wet ingredients in a large mixing bowl.
Combine dry ingredients in a medium mixing bowl and whisk to mix. Fold dry ingredients into the wet ingredients and pour into prepared pans.
Bake for 45 minutes or until a toothpick inserted into the center of each loaf comes out clean.
