Sweet Zucchini Bread
                      Why I Love This Recipe
A wonderful way to make use of zucchini when they start to pop faster than they can be eaten. Freezes well, too.
Ingredients You'll Need
                                     1 c. flour
                    
                                     1 c. sugar
                    
                                     1 tsp baking powder
                    
                                     1/2 tsp baking soda
                    
                                     1/4 tsp salt
                    
                                     1 tsp cinnamon
                    
                                     2 eggs
                    
                                     1/2 c (I use Canola) oil
                    
                                     1 tsp vanilla
                    
                                     1 c unpeeled zucchini-grated
                    
                                     1 and 1/2 c raisins 
                    
                               
Directions
Combine dry ingredients
beat eggs, oil and vanilla, add the dry and beat until combined, (do not overbeat) last beat in the zucchini and raisins.
Pour into a large greased and floured loaf pan and bake at 350 for about 50 minutes or until center is dry
