Teri's whoopie pies
Why I Love This Recipe
There is one dessert that my family is gonzo over.. we even fight and steal eachother's whoopie pies... enjoy! photo to come soon.
Ingredients You'll Need
Cake:
1 box devils food cake mix
1-1/2 cup to 2 cups all-purpose flour
Filling:
2 egg whites
2 tsp. vanilla
4 T. flour
4 T. milk
4 cups confectioner's sugar
1-1/2 cups vegetable shortening
Directions
To prepare cakes:
Preheat oven to 350 F. Grease cookie sheets and lightly flour. Follow directions on devils food cake mix box, add 1/2 cup of flour in intervals to get a stiff mix to make cookies out of the cake. Drop cake mix like cookie dough onto cookie sheets in about 2 inch circles. Keep cake cookies about 1 1/2 inch from eachother. Bake in oven for about 8-10 minutes. Test center with toothpick to make sure cake is done. Set aside on cooling racks.
To prepare filling:
Beat the egg whites until stiff; set aside. Combine the other ingredients and beat very hard for several minutes at high speed. Fold in the beaten egg whites. You can adjust the ingredients to your desire. (I like the filling to be a little gritty, so I will add about 1/4 cup granulated sugar to the mixture.
After cookie cakes are completely cooled, hold one in hand, spread filling on top, and sandwich it off with another cake cookie. There you have a whoopie pie. You should wrap these individually in plastic wrap as they do get sticky to eachother when stored together. Makes about 2 dozen pies and usually keeps for 3-4 days.
