Thai-inspired cod

Why I Love This Recipe
This recipe comes from my aunt, who is a brilliant cook and always into the latest gadgets and trends in the food world. It's really easy and quick to make and incredibly tasty - everyone I've ever fed it to has loved it and my brother requests it regularly. It's great for people who normally don't eat a lot of fish, they're always surprised by it.
Ingredients You'll Need
1 kg cod fillets, skinless and boneless
2-3 limes
a piece of fresh ginger (ca. 2 cm)
2 cloves garlic
200 ml or 1/2 can coconut milk
a dash of sesame oil
a bunch of fresh coriander/cilantro
a dash of fish sauce/nam pla
Directions
Oil a deep frying pan, cut the cod fillets into pieces and put them in the pan. Grate the ginger and garlic over the fish and pour the juice of the limes over as well. Add the coconut milk and sesame oil, and toss half of the coriander on top of the fish. Cover with a lid or tin foil and cook over medium heat until done (ca. 10-15 minutes depending on the thickness of the cod). Add the fish sauce a few minutes before the cooking time is over. Sprinkle with the remaining coriander (chopped) and serve with rice and vegetables.
