Tofu and soba noodle salad

Why I Love This Recipe
Ingredients You'll Need
8oz soba noodles cooked and cooled (I think it would be good with rice noodles, too)
1 pkg tofu diced
3 green onions sliced
1.5 TBS sesame seeds (white or black)
(I also added sliced cucumber, red pepper and carrots)
Dressing:
6TBS soy sauce
2TBS rice wine vinegar
1.5TBS Sesame Oil
1TBS grated fresh ginger
Directions
Combine first 4 ingredients. Make the dressing pour over top and toss. May want to cut back on soy sauce and add more ginger. Enjoy!
