Yummy Nut Ice Cream Topping
Why I Love This Recipe
If you are old enough to remember that yummy nut sauce the ice cream parlors used to put on the top of sundaes and banana splits, you will know what this is going to taste like before you even make it. If you have only known those dried crushed nuts on top of your ice cream, you don't know what you have been missing. Take a little time to make this, maybe churn up some ice cream in one of those new fancy ice cream makers, gather up some other toppings, invite over a few friends, and have a good ole fashioned ice cream supper!
Ingredients You'll Need
2 cups sugar
1 cup water
1/4 cup dark corn syrup
1/2 tsp vanilla
1 cup coarsely chopped walnuts, pecans, toasted almonds, hazel nuts, or blanched, roasted, unsalted peanuts (I prefer walnuts with my second favorite being pecans.)
Directions
Mix sugar, water, and syrup in a 1 qt, heavy saucepan; set over moderately low heat. Heat and stir until sugar dissolves. Raise heat and boil gently, uncovered, without stirring, for 3 minutes. Stir once after the 3 minutes. If the syrup is the consistency of maple syrup, remove from the heat. If not, boil 1 minute longer. Cool slightly and add vanilla and nuts. Stir just to mix and serve warm or cool over ice cream.
