Vegetable Casserole

Why I Love This Recipe
My mom gave me this recipe. I know the calorie count and fat count is off the chart but its very good. Besides, if you take it to a potluck, and only eat a little of it, you'll be fine, right?
The mayo tends to make this dish a bit rich. If you want to tone it down some, cut the mayo amount in half and replace it with 1/2 cup sour cream. Of course the healthier choice would be to replace the mayo with plain yoghurt.
Ingredients You'll Need
1 lb bag of frozen vegy mix cooked
1/2 cup mayo
1/2 cup sour cream
2 cups grated cheddar cheese
1 cup chopped onion (sauteed if you'd like)
Salt and pepper to taste
Garlic Powder to taste (optional)
1 1/2 cups Cracker Crumbs (ritz are great)
1/2 melted butter
Directions
Preheat oven to 375'F
Mix first 5 ingredients (omitting cracker crumbs and melted butter). Pour into a greased 13 x 9 casserole dish. Sprinkle top with cracker crumbs and drizzle melted butter over the crackers. Bake uncovered for 30 minutes.
