This recipe has NO flour, but ARE "Simply Delicious"
Ingredients You'll Need
1 cup creamy or crunchy peanut butter
1 cup granulated sugar, plus extra for decorating cookies
1/2 tsp. salt
1 egg
1 tsp. baking soda
1/2 cup mini chocolate chips
Directions
Preheat oven to 350.
Coat 2 baking sheets with nonstick spray or line with parchment paper.
With an electric mixer, cream the peanut butter, 1 cup sugar and salt. Beat in the egg and baking soda, mixing until well-combined. Mix in the chocolate chips. Scrape the bowl and beaters and mix again to combine. Roll dough into 1-inch balls and place about 1 inch apart on baking sheets.
Moisten the tines of a fork, dip them into sugar and make a crosshatch pattern on top of each ball of dough, pressing the cookies to a 1-1/2 inch diameter. Bake until pale golden, about 10 minutes. Let cool for 2 minutes on the baking sheets, then transfer the cookies to racks to finish cooking.
Makes about 50 cookies.
Chicken notes***Place one cookie sheet at a time in the center rack of an oven preheated to 375°F. Bake for nine minutes and remove. Let stand on cookie sheet for one minute, then transfer to cooling racks to cool.
For a soft and chewy peanut butter cookie, make sure you refrigerate the dough first. Then form dough balls and press down with a fork as before. Then, simply refrigerate the uncooked cookies for at least fifteen minutes to firm it back up. Then with the oven preheated to 300°F, slide one tray in at a time for a baking time of 15 minutes.
