old timey home made red velvet cake, with cream cheese icing
Why I Love This Recipe
This cake receipe was given to me by my mother in law over 30 years ago. Its been a great success with her family and mine. Great for valentines day cakes, in those little heart shaped pans.. have a great day!!
Ingredients You'll Need
1 1/2 cups sugar
2 cups cooking oil(vegetable, canola, whatever)
2 eggs
1 tsp. vinegar
2 oz. red food coloring (two small bottles)
2 1/2 cups plain flour
1 tsp. baking soda
1 tsp. salt
2 Tbs. cocoa
1 cup buttermilk
1 tsp. vanilla flavoring
Icing.
1 stick of margarine or butter
1- 8 oz. pkg. of cream cheese
1 tsp. vanilla flavoring
1 box of 10x powdered sugar (sifted)
1 cup chopped nuts, pecans, walnuts, optional
Directions
beat eggs set aside, mix sugar, oil, vinegar, and food coloring together in large bowl. sift together flour,soda, salt and cocoa. add eggs to oil and sugar mixture, mix. sift in the flour mixture. then add the buttermilk and vanilla.
the mixture will be thin, but will definately thicken when cooked. grease and flour two round cake pans . preheat oven to 350 degrees, bake for at least 30 minutes or until center of cake is done . let cool completely before icing is applied.
Icing
soften butter and cream cheese, blend together in bowl, add vanilla, then sift in the powdered sugar, add nuts if desired. you can refrigerate if necessary till cake cools enough to put it on.
cut cake and enjoy.
