Rhubarb Squares

Why I Love This Recipe
This is a recipe that I got from a friend many years ago and it is something that I make every summer when I have Rhubarb in my garden! It is very yummy!
Ingredients You'll Need
Filling:
3 cups Rhubard
1/2 cup sugar
Crust:
1/3 cup Sugar
1/2 cup margarine
1 egg
1 teaspoon vanilla
dash of salt
1 cup of flour
1/4 teaspoon baking soda
Topping:
1/2 cup of oatmeal
1/2 cup of brown sugar
1/2 cup margarine
1/4 teaspoon nutmeg
1/4 teaspoon ground clove
dash of salt.
Directions
Filling:
Cook Rhubarb and Sugar for 1/2 hour in a large saucepan over medium heat.
Crust:
Mix sugar, margarine, egg, vanilla, dash of salt, flour, baking soda until creamy.
Spread in the bottom of a greased baking pan.
Spread Rhubarb sauce over the base.
Topping:
In a bowl, mix oatmeal, brown sugar, margarine, nutmeg, ground clove, and salt until crumbly and spread evenly over the top of the pan.
You can either bake in the oven for 1/2 hour at 325 or refrigerate and serve when ready.
I enjoy it either way!
