Why I Love This Recipe
Pressed for time and facing a company potluck the next day, I took a shortcut to tiramisu. When my colleagues raved about the amazing texture, I winked and told them the secret was "pre-filled spongecake." They marveled at the exotic sounding ingredient and didn't ask any more questions.
Ingredients You'll Need
1 12-count box Hostess Twinkies (or similar brand)
1 cup strong coffee
3 tablespoons Kahlua (or similar brand)
8 oz cream cheese, softened
2 eggs
dash of vanilla
1/2 cup granulated sugar
1 tablespoon cocoa powder
Directions
- Unwrap Twinkies and slice lengthwise, arranging filling side up in 8X8" baking dish.
- Mix coffee and two tablespoons of the Kahlua in clean spray bottle and spritz Twinkies till they're well saturated
- In a medim-size mixing bowl, mix softened cream cheese, eggs, sugar, vanilla, and remaining Kahlua
- Spread half of the cream cheese mixture on the sliced Twinkies
- Top with another layer of sliced Twinkies, filling side down
- Spritz Twinkies with coffee spray
- Spread remaining cream cheese mixture over second layer of Twinkies
- Sift cocoa powder over cream cheese mixture
- Chill for at least two hours
