Easy Vegetable Soup

This recipe is so easy! It also tastes better the next day! You can replace the veggies with the veggies you like. If you want this to cook fast, slice your veggies super thin. I make a big pot of the soup and eat it for several meals - seriously it gets even better on day two. We hope you like it as much as we love it!
Ingredients You'll Need
                                     3 yellow squash
                    
                                     3 zucchini
                    
                                     carrots (I use a bag of sliced carrots for time)
                    
                                     half an onion 
                    
                                     tsp of olive oil 
                    
                                     one box of veggie broth 
                    
                                     one can of diced tomatoes 
                    
                                     water 
                    
                                     4 tbsp of butter 
                    
                                     Salt / pepper to taste
                    
                                     Optional: top with a little mexican cheese
                    
                               
Directions
Prep: 
Cut up veggies (3 yellow squash, 3 zucchini) — 
Cut half an onion thin - dice
In Dutch Oven Pan:
Add diced onions and drizzle with olive oil 
Saute onions until you can see through them
Add veggie broth (the whole box) 
Put veggies and diced tomatoes into dutch oven pan
add butter
Top off pan with water. 
Cook until squash is done 
Salt / pepper to taste 
Put a wooden spoon across the top of the pan to prevent the pan from boiling over. 
You can also top with a little mexican cheese -
