How to Bake Sweet Potatoes

Sweet potatoes can be intimidating. Heck, I avoided them for years until I learned how to make them fast and perfectly cooked. This recipe is my go-to recipe for sweet potatoes and they are so easy anyone can make them. Plus, if you are making a salad or something else, you don't have to put these in super early - in 30+ minutes they are done. Sweet potato is so good for you - they are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. The list can go on. Just eat them! :)
Ingredients You'll Need
Sweet Potatoes
Olive Oil
Salt
Directions
Preheat oven to 400 degrees.
Cut sweet potatoes in half - lengthwise.
Place each half in a baking pan with the flesh up.
Drizzle each side with a little oil. Rub oil into flesh (to cover entire side).
Sprinkle a pinch of salt on each half.
Turn over so the flesh is facing down on the pan.
Bake the sweet potatatoes uncovered for 30-35 minutes. I prefer mine well done so I do 35 minutes.
When you take them out of the oven, the flesh will be soft enough to cut several incisions on each half. I do this so when I add a dollop of butter the butter melts down.
These are delicious the next day too - so put them in an airtight container before you go to bed and enjoy them tomorrow.
