Baked Sweet Potato with Cinnamon

I have been making sweet potatoes for some time. But last night, my husband added a little cinnamon to his and it looked so good, I decided to try it too. OMG, it's delish! It's not sweet like candied sweet potatoes... it's a nice change of flavor.
You can add cooled sweet potatoes to salads or just reheat tomorrow.
Ingredients You'll Need
Two medium-sized sweet potatoes
Olive Oil (to coat)
Salted Butter (we used whipped in the photo which is why it looks like cheese - you can use any butter you have on hand)
Cinnamon to drizzle over the finished product
Directions
Pre-heat oven to 375F.
Peel sweet potatoes
Slice sweet potatoes so they look like medallions (if they are too round in the middle, you can cut them in half). Slicing them will make it easy to bake.
Place sliced sweet potatoes in a pan
Drizzle olive oil over sweet potatoes and mix (so the oil coats each piece of sweet potato)
Place pan of sweet potatoes in oven and bake for 50 minutes (check at 45 minutes to see if you need to add a few more minutes).
Once finished, they should be soft.
Place on plate and add some butter (for taste) and then sprinkle with a little cinnamon
