Pumpkin Cheesecake
My mom found this recipe in her local newspaper several years ago. Its a favorite around the holidays. Tip: When you go to place your cheesecake in the oven, put a cooling rack in a shallow pan (such as a cookie sheet). Put the cheesecake on the rack and pour 2 cups of water in the shallow pan. Make sure the water doesnt touch the bottom of your springform pan. Adding this water will help prevent the cheesecake top from cracking.

I had to think of a cookie recipe for the BakeSpace Challenge. Since my family doesn't have any traditional cookies that we bake every year, I decided to find a recipe that originates from the country my grandfather came from...Norway.

Julia Child's Orange and Almond Sponge Cake via Cupcakes
Aka Gateau A L'Orange Et Aux Amandes. I was looking for something to make to put some extra cream cheese frosting on. I happened to have all the ingredients. Julia's recipe is for a sponge cake but I didn't want to ice a whole cake...thus the cupcake version was set in motion. For the pulverized almonds in this recipe put a cup of almonds in the food processor along with several tablespoons of sugar (this keeps the almonds from getting all lumpy from the oils thus preventing you from adding them to your dry ingredients). Turn on the food processor and "blend" until....well.....until the almonds are thoroughly pulverized I s'pose

This is a recipe I came up with for the Archway Cookie Sweet Summer Treats Contest. Using Archway Classic Oatmeal Cookies makes a wonderful base for a cookie crust. I lined the inside of the crust with chocolate to prevent the crust from getting soggy with the Almond Butter pudding that I filled them with.

My grandmother use to make this for Sunday Dinner and it was a family favorite. Her version was in cake form, which you can certainly do. Just change up the cooking time according to the cake box recipe. It's very moist and very strawberry!
