There are a lot of recipes out there for enchiladas, burritos, tacos, salsa....etc. Have you ever tried finding a Mexican vegetable side dish? I searched all over the place today looking for one. Calabacitas means zucchini. And this is a really good recipe if you want something different than the "norm". I found it on a Cooks.comStuffed Winter Squash
Submitted by: Atina Diffley for Midwest Home MagazineI found this recipe two years ago in a magazine and found that it was so easy to adapt to whatever vegetables I had on hand. I don't actually bake the squash again after the stuffing is added, I just sauté the mixture for a few more minutes before adding it to the squash. This makes a lot of stuffing, which frankly tastes good just by itself!
My Boys' Favorite Squash Recipe
I first made this years ago when I had some butternut squash from a CSA box. My husband and son loved it and asked me to make more. Th This is an easy way to serve squash to your family. Any type can be used as well as any pasta. This one was made with egg noodles but I have since made it with penne and loved it. To simplify use pre-cut squash and sauce. You can even cook the squash a day or two in advance and covered in the fridge until you are ready. If you're not logged in to BakeSpace, you'll be asked to login (or join) so the cookbook can be added to your cookbook library. Once in your library, you can access the cookbook anytime, anywhere via BakeSpace.com, as well as our Cookbook Café iPad app.
